Today’s One-On-One guest is Beth Zupec-Kania who has been an RND (Registered Nutritionist and Dietician) for 32 years. She works with The Charlie Foundation for Therapeutic Therapies in Santa Monica, California. The foundation was founded in 1994 and is named for Charlie Abrahams. Twenty years ago, Charlie developed seizures and as a last resort, his parents turned to a ketogenic diet for help. The diet worked and Charlie was seizure free.

HOW THE KETOGENIC DIET CHANGED CHARLIE’S LIFE
- Between 1 and 2-yrs old, Charlie was on seizure medications and had already gone through brain surgery
- His father, Jim Abrahams, found out about the Ketogentic diet on his own
- The Ketogenic Diet had been around since as early as the 1920’s
- Charlie’s doctor referred him to John Hopkins and within a month of starting the diet, his seizures had stopped and he was off all medication
KETOGENIC DIET AND CANCER
- In the 1920’s, Otto Warburg, a German physician, showed through metabolic research that cancer cells prefer sugar glucose as an energy source
- His work was dismissed until recently
- Tumors grow quite rapidly when they have sugar as fuel
- Cancer cells don’t recognize ketones as energy
HEALTHY FAT ADAPTED DIET
- Fats give you energy that will last you all day
- However, with no sugar and no refined carbs, some women have hormonal issues
- They need more carbs
- Beth recommends they eat more veggies and berries (as opposed to other fruits)
KETOGENIC CHALLENGE
- For adults, it is counterintuitive to eat a lot of fat
- So Beth had to come up with recipes and techniques to up the fat
- These include olive oil and balsamic vinegar shoots
- Candy made from coconut oil, a drop of Stevia and some cocoa powder
- “Fat bombs” or “Fat boosters”
